For those of you who love the show it's funny to see Sookie placed in Tina Fey's role, Bill the producer, and Eric as the TV executive. There's even a Bubba appearance. A Lover And A Fighter by MarriedMinx
This is the sequal to Goodbye, My Lover and written by MarriedMinx. Amazingly, this story has Sookie and Quinn at its heart, but I really love it.
In Goodbye, My Lover (which is heartbreaking and you would need to read it first) Eric tells Sookie he must leave for some unknown reason, but its arranged that Amelia and Quinn will help train Sookie with magic and fighting abilities. Hunter is also an integrak part, and as Sookie's abilities grow the plot thickens.
This seems to be updated almost every day, and its truly fantastic and worth a read. I wouldn't normally read anything that didn't have Eric as an integral part, but the friendship between her and Quinn is also great. -- drumbjo
April Showers by Kittensandcombatboots
This is an awesome AH Eric and Sookie fic. Eric the sexy Bar owner, meets Sookie, a librarian that has just split with her asshole boyfriend Bill. They meet under strange circumstances, with Sookie stumbling across Eric's daughter Pam crying in the back of the bar. The background of our two favorite characters is excellence, and it has sucked me in fully already. She has even brought in Eric's 'Brother' from DITF into the mix. Overall for kittensandcombatboots first SVM fic, she has done a great job in writing the characters as close to cannon as you can in the AH world!! -- Dazedrose
This story has the snarkiest Pam I've seen in a while, and she's seven. The whole story is written a tone that is easy to read. It flows easily and leaves you wanting more. And can I just say Eric, as a dad? UNF. Swoonworthy.

Changing It All Forever by FODForever
I have been recommended this on my profile as one of my favorite favorites in the canon category. It starts right before DAG and Sookie has the opportunity to go back in time and change things, keeping her memory. She chooses to go back to right before she met Bill. It is hilarious to see her handle things with 2 years' knowledge and experience. It is also satisfying to see her build a relationship with Eric. It hasn't updated in a bit but there are 43 chapters and new readers may encourage the author to continue. It currently ends right before Club Dead events would start. I look for the characters to feel right in stories and I love how this author captures their personalities. -- Northwoman

Sometimes I find it hard to think of recommendations because I haven't started anything new or, if I have, someone has recommended it recently. So I decided to go with what really pleases me when it pops into my inbox..
First of all Dead to Her World by Pixie Giggles, it's a reworking of the Hallow/spell thing, only this time it's Sookie running down Eric's road and she doesn't know who she is and who he is either. To add to the intrigue she was supposed to be getting married the next day....and not to Eric.
Why would she be running to a house she had never been? Why is Eric so reluctant when she shows an interest in him? Lovely story and a great Sookie who really likes the Viking!

This story is by the wonderful Afalcone10, and works beautifully (in my humble opinion) with the equally wonderful Pixie story above...
Again a rework of the Hallow spell theme, this time Sookie finds Eric as she did in book 4 but he was the first vampire she had ever seen! She only knew who he was because she had seen in Dawn's mind that she slept with him. The truly great (and sometimes angsty part) comes when he regains his memory, well some of it anyway ;)
I LOVE how E/S are together when he has amnesia, he is just like how I would picture him being with someone he truly loves, you'll melt for Eric all over again :) -- Alison at Northman Maille

This is a story from one of my favorite authors and a continuation of her Great Pumpkin story. I loved it and it built such suspense in me without being overly angsty. It is an AH story where Sookie is herself (without telepathy) and Eric is an elementary school principal. Hunter's parents have died and Sookie is now his guardian. They have concerns about the propriety of becoming involved. Fighting their attraction just doesn't work, then Pam decides to help them over their ridiculous interpretation of appropriateness. I confess that I now have the privelege to beta this story. -- Northwoman

Before you groan and walk away - it's not a student/teacher fic, but a teacher/teacher fic.
I saw a rec on twitter and laughed at the title, so I took a look. I started reading and couldn't stop. Then I told someone else, and (after I assured them it was teacher/teacher LMAO) they did the same thing. It's smart and funny and has some really great lines. I love the chemistry between these two and the tension while they're at school flirting and can't do anything about it. -- Missus T
My Ten Dates with Sookie by Thyra10
Thyra10 is a generous and prolific favorite in our little world, and this one-shot is one of my favorites of hers. It's a Support Stacie fic born from the generosity of the also-talented Miss Construed. It's sweetly unexpected and hard not to love. -- Suki59
Sookie Interrupted by Jan-of-Arc
This story is canon-non-canon, and I love it for it. Jan-of-arc has taken all our favourite characters and situations (and some of the less favourite ones) and twisted them ever-so-slightly - not so much as to make them unrecognisable, but enough to make them her own. It's been done cleverly and with a lot of thought.
What would Sookie be like if her parents HAD listened to the doctors all those years ago, and she'd been locked away for hearing voices? It's not implausible, and it makes for a VERY different story with a much stronger Sookie - and let's be honest, we could all use a stronger, more self-reliant Sookie in our lives.
You will have to get an LJ account and friend Jan-of-arc, as it is a 'friends only' story, but I promise you you'll be glad you did! -- elbly

This is an old, complete last May, canon story but one of my favorites. It starts at the beginning but things take a different path. Bill screws up, being the douche he is. It is funny; Sookie is a bit more adult and we get lots of Eric. What more could I want? Oh, the author is actually from Sweden. -- Northwoman

Post season 2 of TB, Bill is missing and Sookie has taken up cursing and smoking. Eric knows where Bill is but wants Sookie to 'earn' the information...a strip club and lapdancers follow.
